So many of you wanted this recipe that I thought it easier to just put it in my blog.
PIZZARIA CHICKEN
(SERVES 4-6)
1/3 c. Butter
1 ½ c. Water
16 oz. can stewed tomatoes, undrained
5.5 oz. pkg. scalloped potato mix
3-31/2 lbs chicken (6-8 pieces)
2 oz. sliced pepperoni
1 tsp. salt
1 tsp. oregano
1 c. shredded mozzarella
In 13x9 baking dish melt butter in pre heated 350 degree oven. Meanwhile in 2 qt. saucepan, combine tomatoes, scalloped potato mix, water, salt and oregano. Stir to blend. Heat over medium heat till comes to a boil (about 10-12 mins) and then boil 3 minutes. Stirring occasionally. Set aside.
Dip chicken pieces into melted butter to coat. Place skin side up ( if using chicken with skin) in baking dish and spoon potato mixture around and under the chicken. Cover with aluminum foil and bake for 15 minutes. Uncover and bake for another 45-50 minutes. Add Pepperoni and sprinkle cheese over top and bake for additional 8-10 minutes till cheese melts and chicken is tender.
NOTE: If using boneless skinless chicken, cut cooking time from 45-50 down to 35-40 minutes.
