My sister called the other night, she had been looking through the cookbook I created from my mom's recipes and couldn't find the one for "spiders". Spiders are cookies, and I use that term loosely, made from chocolate, chopped peanuts and those french fried sticks you buy in a can. We loved them as kids, well I went through the old cookbooks I have thinking it came from the one of the church and school cookbooks and can't find it. I did find something similar except it used corn flakes. Kelly copied that recipe and and was going to substitute the french fried sticks instead of the corn flakes. What started this was she is going camping this weekend with friends and she does the baking while they supply the meals. One of the girls asked for these, now Kelly says she hasn't made them since before her son was born--that was almost 20 years ago and this girl still remembers them and wants them. Once Kelly said it to me, I thought, wow I haven't made them in that long either. We both loved them and they were so easy. Messy though cause as you eat them the chocolate starts to melt from the heat from your hands and of course you are covered in chocolate...but oh sooooo good.
Oh the memories we lived on the phone the other night about cookies. Mom was famous for her baking especially at the holidays--she must have made over 20 different kinds of cookies and we all had our favorites. Some are in the Betty Crocker cookbook but most were from family and friends that she collected through the years.
I tried a new recipe this week that she would have loved. Chicken Spinach and pasta. It's a baked ziti (almost) with chicken and spinach in it. Boy was it good and so easy.
It's been a long week here, work is busy and people are getting nasty, hey it's not my fault you waited till the last minute to schedule that appointment and I don't have a space for you until next week or the week after (depending on the test ordered). Oh wells, some things never change.
I'm missing Shannon--hard to believe she's going to be 2 soon. Seems like a month ago we were waiting for her to arrive and now she's almost 2. Jim and I went to Tessie's new home last night and Ryan is almost 3 (Julie would have loved him) such an imp he is....and so cute. He had to show us his new bedroom with all the race cars in it...race cars bedspread, lamps, toy box, etc. We brought her a frame for his bed, he's getting a BIG BOY bed. He's outgrown the toddler bed. Everytime I see Ryan I think of how much Julie is missing and how much he's missing, not having his gramma around. I know she's watching from Heaven though, those dragon flies come around at just the right times to tell me she's here.
My heart is a little heavy right now because my friend Sue has to see her son in law deploy again soon....Thankfully I had to go through it once, she is getting to be old pro at it. It's not something you want to be a pro at.....
Enough for tonight, my prayers are with the people in Florida as they continue to brace against Tropical Storm Flo (or whatever the name is) and with our military, their families, and with all of you reading this.
